I am not a Greek Goddess but my nachos are…
Start with a simple greek quinoa salad with all the fixings, shovel it onto pita chips and top it with a very generous amount of fresh mozzarella.
Into the oven and 5 minutes later you have a pile of healthy, cheesy pita chips. Now for the finishing touches. Last but not least, cover the cheesy nachos in feta cheese and fresh basil. This step is a must. Yes ! It is more a loving demand than an option… Let me know what you think
